At 2 o’clock in the afternoon, Carrera meets with company chef Julia Sanchez to demonstrate flambéing and plating. “Whatever we do with a meat version, we can also do with a vegan version – and we make it taste great,” says Carrera proudly, of his jerk tofu skewers with mango sauce and his sweet plantain stuffed with vegetable meat.
In addition to her food, another Carrera passion is giving back to the community. Before the pandemic, Carrera held free weekly cooking classes in the South Bronx to help people start a restaurant career. “Most people in my community are immigrants. It’s my way of giving back,” she says.
It’s 3 p.m. and Carrera ends her day by looking at a photo album from her daughter’s Sweet 16 birthday party. “My most difficult client,” jokes Carrera, a mother of two.
Looking to the future, Carrera says the marketing skills she learned from Verizon will help her achieve a long-term goal: owning event space. “It’s amazing what I’ve been able to accomplish, but I always like to think about what’s next,” she says.
